More May cooking classes

How to Cook Everything bookCooking classes based on popular books and movies are among the offerings coming up from Eastern Iowa Community Colleges’ Continuing Education Department. The hands-on classes are held at the college’s West Davenport Center, 2950 N. Fairmount St., from 6 - 9 p.m. and cost $19 each.

The Basics/Cook Everything is inspired by Mark Bittman’s popular cookbook exploring the basic techniques used in preparing grains, meat, poultry and seafood. It includes useful information on choosing cuts of meat and seafood, and practical tips for recognizing doneness, adjusting seasoning and ultimately trusting your instincts. Participants should bring containers for leftovers. Class will be held May 19, course number 138110.

Summer Brunch is the perfect recipe for lazy weekend mornings including quiche using potatoes instead of the usual crust, crab cakes with herb salad, spinach and feta frittata, and strawberries with dip. Class will be held May 20, course number 138420.

A Night in Provence takes participants on an exploration of classical cuisine from the French region of Provence. Class will be held May 21, course number 138274.

5 Spices/50 Dishes is based on the book of the same title by Ruta Kahate. With a combination of coriander, cumin, mustard seeds, cayenne pepper and turmeric, many flavorful Indian recipes can be made. Students will prepare the Indian flatbread Naan, some condiments including Cucumber Raita and three main dishes including a vegetarian dish, a shrimp dish and a chicken dish. Class will be held May 28, course number 138102.

Summers in Tuscany/Italian Cooking is especially for those who have read the book or seen the movie, Summers in Tuscany. But even if you haven’t, you will still enjoy these learning how to make Tuscan dishes. Class will be held May 29, course number 138274.
