January Cooking Classes

Homemade ravioliIt might be sub-zero temperatures outside but it’s warm in the kitchens of Eastern Iowa Community Colleges’ Continuing Education Department. The college is offering a number of late-January cooking classes at its West Davenport Center, 2950 N. Fairmount St. Classes cost $19 each, are hands-on, and held from 6 - 9 p.m.

Royal Icing Basics proves that sugar cookies are the next big thing, if they have icing on top. Participants learn basic techniques such as flooding and wet on wet design, and walk away with cookies that are both great to look at and taste good too. Students are asked to bring a cookie sheet to take home wet cookies. Class will be held January 27, course number 130714.

Yeast Breads 101 is an ideal class for beginners including properly proofing yeast, kneading techniques and using a stand mixer to make rolls, loaf breads and peasant bread. NOTE: This class will be held at Pleasant Valley High School, 604 Belmont Road, Bettendorf. Class will be held January 27, course number 130711.

Homemade Ravioli shows how to prepare delicious ravioli with both meat and vegetable fillings. Class will be held January 28, course number 130826.

Give Me Five Minutes a Day and students will be making their own artesian breads. Learn how to make several different baked items from this special dough. Students should bring a five to six quart plastic storage container with lid (an old ice cream bucket works perfectly). Class will be held January 29, course number 130742.

Crème Brulee and Other Custards includes Crème Caramel (Flan), Crème Brulee, Panna Cotta and Custard Filled Cream Puffs. Class will be held January 30, course number 130720.
