France to India

Upcoming cooking classes from Eastern Iowa Community Colleges’ Continuing Education Department take a quite varied path in the next couple of weeks, ranging from a class for children and parents to one for making beer can chicken on the grill. Add to that French and Indian classes as well as a gourmet trip to Chicago. The hands-on classes are held at the college’s West Davenport Center, 2950 N. Fairmount St., from 6 - 9 p.m. and cost $19 each.

Indian foodCurry Dishes/India includes Punjabi vegan curry entrees such as Butter Paneer Masala, Cabbage Kofta, Chole, Rajima, Saag Polak, Punjabi Kadhi and Aloo Pudi. Class will be held June 12, course number 138048.

Parent/Child Summer Cookies doesn’t buy into the sentiment that baking cookies is reserved for cold months. The class is open to parents and children seven years and older. Participants will be making sugar cookies in summer shapes and decorating them with royal icing. They are asked to bring a cookie sheet to take wet cookies home. Class will be held June 14, course number 138284. Note: This class will be held from 9 a.m. – Noon.

Garnish with a Flair shows some great techniques for carving fruit and vegetables. Class will be held June 16, course number 138266.

French Dinner provides a feeling of what it’s like to spend an afternoon in France with Swiss chard gratin and baked whitefish with parsley and tomatoes on wilted greens. Class will also make a strawberry rhubarb soup. Class will be held June 17, course number 138419.

Beer Can Chicken on the Grill not only shows how to make this recipe everyone has heard of but few have actually enjoyed, but also includes tortellini salad, corn dip appetizer and some awesome brownies. Class will be held June 18, course number 138259.

Chutneys/India will enhance any menu with such sauces as Coconut, Mint, Imli, Mango and Tomato Chutneys, and Raita Spinach and Vegetable. Class will be held June 19, course number 138046.

Inside Out is designed for all those people who often look at the side dish as a main meal. Class will be held June 23, course number 138265.

The college is also offering a Gourmet Goodies & Equipment trip to Chicago on June 24. The trip will take in shops that sell kitchen wares, spices, baked goods, olive oil and everything else a gourmand would want.

It departs at 7 a.m., returning at approximately 8:30 p.m., from the Kimberly Center for Alternative Education, 1002 W. Kimberly Road, Davenport. Participants are encouraged to wear walking shoes and bring a cell phone and an insulated container with ice for perishables. Cost of the trip is $79 and the course number is 137841.
