Hold onto your Bundts in April

bundt cakeHold onto your Bundts or Freeze It & Forget It, are just two of the April cooking classes offered by Eastern Iowa Community Colleges’ Continuing Education Department. The hands-on classes are held at the college’s West Davenport Center, 2950 N. Fairmount St., from 6 - 9 p.m. and cost $19 each.

Freeze It & Forget It moves past the age old frozen pizza with breakfast dishes, dinner and desserts that can be made ahead of time and frozen for convenience. Participants should bring containers for leftovers they can take home and freeze themselves. Class will be held April 7, course number 135826.

Hold onto Your Bundts brings the fun back to coffee cakes and desserts. Class will be held April 8, course number 135986.

Fruit Jams provides some new recipes for spring and summer. Class will be held April 9, course number 135805.

Homemade Pasta shows how to make the perfect pasta as well as red and white sauces. Class will be held April 10, course number 135961.

Cupcake Creations includes easy decorating techniques like a daisy cupcake with marshmallows and gumdrops or a baseball cupcake with red licorice. Participants should bring containers for leftovers. Class will be held April 14, course number 135825.

More than Meatballs spices up buffets with tantalizing appetizer recipes. Class will be held April 15, course number 135987.

Chickens in Your Backyard discusses exactly that, raising chickens in the backyard. The class will cover different breeds, where and how to buy chicks, different types of coops, egg safety and city ordinances. Participants will be handling chicks and hens so they should dress appropriately. Class will be held April 16, course number 136038.

Heavy Hors D’Oeurvres has appetizers for a crowd with crab cakes, potato skins, buffalo shrimp and bacon-wrapped chicken. Class will be held April 17, course number 135890.

The college is also offering an April 8 Gourmet Goodies Chicago trip. The chartered bus trip includes shops that sell kitchen ware, spices, baked goods, olive oil and everything else a gourmand can want. Participants should bring a cell phone and cooler.

The bus departs at 7 a.m., returning at approximately 8:30 p.m., from the Kimberly Center for Alternative Education, 1002 W. Kimberly Road, Davenport. Cost of the trip is $79 and the class number is 135808.
