About Chef Brad 

Chef Brad Scott has been a journeyman chef and culinary educator for more than 30 years.

He’s worked himself through the ranks, literally starting out at the bottom as a dishwasher at the Boars Head restaurant. He apprenticed under the leadership of restaurant icon Al Johnson, working at each of Johnson’s many establishments (The Dock, JK Frisbees, Tortilla Flats and Governor’s) and helped open what is now the Iowa River Power Company.

Chef Scott next supervised the Augustana College Center Food Service where he learned about quantity cooking and catering.

His next position took him to Royal Neighbors of America’s Grandview Terrace as Director of Dinning Services and Nutritionist.

In 1996 Chef Scott became a part of the Eastern Iowa Community Colleges family as the Chefs Apprenticeship program facilitator at Scott Community College. At that point the culinary program had only nine students. Since then, Chef Scott has worked tirelessly in growing the program to an overflowing capacity of more than 135 students in 2012.

In the fall of 2010, Scott Community College opened the state of the art Culinary Arts and Hospitality Management Center on the campus. The center fulfilled a dream Chef Scott had when he first began working for the college.

“With the state of the art taping capabilities we have in our lab we thought sharing some foodie style demos and recipes might be fun for the community and get people fired up about hospitality” said Chef Scott about starting the food show with WQAD.

As a visual hands on learner himself , Chef Scott has championed the Tell Me – Show Me – Let Me Do It mantra. The heart of the college’s culinary program is hands-on involvement.

In the summer of 1999 Chef Scott developed a Culinary Youth Apprenticeship to assist high school students in pre-apprenticeship training and credit for life experience articulations with nine high schools in the state.  Today it is still one of the only high school apprenticeships recognized by the US Department of Labor and has been viewed nationwide.

In the Spring of 2011 Chef Scott worked with campus job specialists and the community to develop a Second Chance program for ex-offenders to assist with helping get employment in culinary apprenticeships.

Chefs Scott lives in Coal valley, IL, with his wife Karen, two girls, Alexa and Sabrina, and step son Austin.
